It's time for a new recipe. I thought it is finally
time to publish the recipe for beetroot puree. It's a simple recipe and for
this reason I've been wondering if I should share it with you or not. But most
time the simple things are the best, so why not. And maybe not everyone knows
the recipe of beetroot puree. I did not know it until a few years ago.
We need:
- 1 large beetroot or 2 smaller ones
- 2 cloves of garlic
- 140 g of butter
- 200 ml of cream
- 600 g of floury potatoes
- salt
- pepper
Preparation time: 60 minutes
Results: 4 servings
This is how we proceed:
- Put potatoes in a pot of salt water and boil until they are soft. Pour into a sieve and allow cooling.
- Peel the beetroot and the garlic. Melt 40 g butter in a saucepan then sauté garlic and beetroot for 2-3 minutes. Add 75 ml of cream, season with salt and pepper to taste and simmer for 15-20 minutes at moderate heat until the beetroot is very soft.
- Mash the beetroot.
- Heat remaining cream and remaining butter and add portions wise to the peeled potatoes and mash to a fine puree. Mix the beetroot puree with the mashed potatoes and season with salt and pepper.
