Some time ago, my mother came visiting me, and she brought me a piece of lamb...even though I told her not to bring me anything…what can I say…mothers! I'm not a big meat eater...and lamb has an intense flavor...but I did not want to throw away the meat. So I decided to cook a lamb stew from it. And I must say that it really tasted good.
Ingredients for 2 servings:
300-350 g lamb
1 onion
white grapes
1 handful walnuts
3 tbsp olive oil
1 sprig fresh thyme
½ tsp cumin
salt
pepper
Preparation:
Wash the meat well. Even better is to put the meat for 1 hour in cold water, changing the water every 15 minutes. Dry and cut into bite-sized cubes. Wash and dry grapes. Peel onion and chop finely.
Add the olive oil in a pan and fry lamb and onion for 10 minutes.
Add grapes, cumin, walnuts and thyme leaves. I did not have fresh thyme so I used the dry one.
Season with salt and pepper. Cook for another 2 minutes.
Arrange on plates and serve.
