Grilled Halloumi with lemon salsa



Hi folks. I'm back from part 2 of my holiday, so you have again something to read. Summer is here, the barbecue season has begun, so what do you say about some grilled halloumi with lemon salsa?


For 4 Servings you need:


500 g halloumi cheese grill
1 lemon
5 tbsp olive oil
10 black olives
2-3 spring onions
pepper
salt


    ingredients



    What we need to do:

    For the lemon salsa: Wash, dry and grate lemon peel.

    Cut lemon in half and place on the preheated grill for about 5 minutes - until the pulp is soft. Allow to cool briefly and press out the juice.



    Wash spring onions and cut into thin rings. Finely chop the olives. Mix lemon juice and zest with 3 tbsp of olive oil. Add olives and green onions and mix. Season with salt and pepper.



    Brush halloumi with some olive oil and grill for 2-3 minutes on each side.



    Arrange on plates and serve.
