Braided yeast bun with candied fruits


I'm back; later, than I have planned. Easter is in less than a week and once again I have failed to post Easter recipes in time. Last year I just forgot about Easter and I did not prepare so many Easter recipes. Therefore, I had planned to show you this year several recipes. But the ones who follow me on Facebook, know that my PC crashed again...Well...I cannot do anything about that as I am not able to turn back time. Nevertheless, I still have time to share with you 1-2 recipes in the next days. The beginning of my short Easter series makes this braided yeast bun with candied fruits.

You need:


500 g wheat flour
50 g raisins
2 tbsp rum
250 ml milk
20 g fresh yeast
80 g sugar
4 egg yolk
75 g butter, melted
1 pinch of salt
150 g candied fruits
1 egg
2 tbsp milk



This is how we proceed:


Sift flour 2 times in a large bowl.

Give the raisins in a bowl, dash with warm water, add 2 tbsp of rum and soak for at least 15 minutes. Then drain and chop finely (or not).

Warm up milk (careful, don’t let it boil!), crumble yeast, add sugar, 4 egg yolks, butter and salt and mix everything well until the yeast is dissolved.




Pour egg-milk mixture to the flour (not all at once) and knead to elastic, sticky dough. Add raisins and candied fruit and knead until you get elastic dough that does not stick to the bowl wall.




Cover bowl and let dough rise in a warm place for 1 to 2 hours (until the volume doubles).

After the waiting period turn dough onto a floured surface (I use a silicone mat), knead again and divide into 3 equal pieces. If they are not equal, there's no problem...mine were not...and I did not want to weight every piece. Roll out into ropes. During this step fruits will fall out from the dough again and again. Either you pick them back in the dough, or you do as I did: simply eat up the fruits 😂.




From the 3 strands braid a braided bun. I must admit, at first I tried it with 4 strands, since I'm not a braid master I had to start all over again...only with 3. And it worked fine. Give bun on with baking parchment lined tin, cover and let rise for another 30 minutes.

In the meantime preheat oven to 180°C degrees.

Whisk an egg with 2 tbsp milk and brush the bun with it. Bake in the oven for 40 minutes. Take a look after 20…if the bun has a too intense golden-brown color then cover with aluminum foil.
