Hi! In the previous post I told you something about asparagus and today I have a recipe for you. This time it is a vegetarian recipe but I can assure you that it tastes wonderful.
Ingredients for 2 servings:
500 g green asparagus
200 g feta
1 egg
3 tbsp balsamic vinegar
4 EL olive oil
2 tbsp flour
sunflower oil for frying
salt
pepper
Preparation:
Bring salted water to boil. Wash the asparagus, cut the woody ends and peel the bottom half. Cook in boiling water for 5 minutes.
In the meantime, prepare the marinade: mix well the vinegar, olive oil, 2 pinches of salt and pepper.
Drain the asparagus, rinse with cold water, place it in a bowl/ dish and pour the marinade over it. Leave for 10 minutes.
Meanwhile, cut the feta cheese into large chunks. Whisk the egg. Dredge the feta first in flour, tap off the excess and then dredge it in the egg.
Heat oil in a pan. Fry the feta cheese over medium heat for about 1 minute on each side.
Place asparagus and feta cheese on a plate and serve.
