Roasted asparagus with prosciutto and rucola

Hello my dears! How are you? Hungry? You don’t know what to cook? How about asparagus? Again asparagus? ... Yes, it is asparagus season now ... but do not worry ... I will not bombard you with asparagus recipes :)


For 2 servings we need:

500 g white asparagus
100 g rucola
6 cherry tomatoes
3 tbsp olive oil
2-3 tbsp balsamic vinegar
1 pinch of sugar
salt
pepper
butter/ oil for frying
4 slices prosciutto
1 l water

How do we proceed?

Wash asparagus, peel and cut woody ends. Cook in boiling salted water for about 10 minutes until al dente, take it out and drain.

Heat butter/ oil in a pan and roast the asparagus for about 3 minutes.

Wash and drain well the rucola. Wash and quarter tomatoes. For the vinaigrette, mix the olive oil, vinegar, salt, sugar and pepper.

Mix the rucola, cherry tomatoes and vinaigrette.

Arrange the asparagus, prosciutto and salad on a plate.
