Dear readers, I'm back after a short unforeseen break from the blog. This can happen when you do not plan any blog posts in advance and then, due to the everyday program you just do not get to write. But now I'm here, and this is what counts. It is not so long until Christmas and I wanted to give you some ideas about what you could bake for Christmas. This time I don’t have recipes for classic biscuits, as I did not have time to bake some. The first recipe I want to share with you is one for Christmas muffins. Here is the recipe:
This is what we need:
For the muffins:
300g
dried fruit

g walnuts

g flour

tsp baking powder

tbsp gingerbread spices

g soft butter

g brown sugar

tsp grated orange peel

Eggs

ml orange juice
For the decoration:
fondant
food
coloring
cocktail
or black cherries
This is how we
proceed:
Preheat oven to 170°C. Cover a muffin tin with paper or grease the tin very, very well with butter. I would take the paper forms
Chop dried fruit and walnuts.
Mix flour, baking powder and gingerbread spices and sieve into a bowl. In a separate large bowl beat butter, sugar and orange zest until fluffy with an electric mixer. Add the eggs one after another and mix well.
Add flour-baking powder mixture and stir well. Stir in orange juice. Add dried fruit and walnuts and fold in using a wooden spoon.
Spread batter evenly among the muffin cups and bake for about 30 minutes. Remove from oven, let cool slightly and then remove them from the tin. Let the muffins cool completely.
For decorating rolled out fondant, cut out circles and place on the muffins. I then modeled from fondant bows, candy canes and gifts and decorated the muffins. You can also use cocktail or black cherries for garnish.
