long, long time ago, I bought a new cake tray that came together with 2
recipes. When I read the recipes, I knew I wanted to try them. But somehow I
always baked and cooked something else and eventually I totally forgot that I
have a new cake pan. Not too long ago, I rediscovered that I have the form. I
bought the necessary ingredients and then baked the cakes. And then immediately
I asked myself: why did I wait so long until I baked them? They taste so good
and look really nice. They are ready in no time, so perfect for when you expect
guests. So here's the recipe for the exotic mango dream mini cake.

This is how we
proceed:
Preheat
oven to 175°C degrees.
Beat
butter, sugar and vanilla sugar for 5 minutes until creamy. Add eggs and lemon
peel gradually and mix well. Mix together flour and baking powder and fold in.
Mix yogurt, honey and lemon juice until smooth and spread on the cooled cakes. With the help of a potato peeler cut thin slices of the mango and arrange on the cream in the shape of a rose. Garnish with mint leaves.
