Blue velvet cake

What do 7 bloggers do when one of their blogger-friend will become a mother? Who knows it? No one? Ok...I'll tell you...they organize a virtual baby shower. But from the beginning: Mitzia from Cook'N'Roll will give birth to her first baby soon. And Verena had the great idea to trough a virtual surprise baby shower for her. And other 5 bloggers wanted to participate to the surprise. In our secret FB group the idea was refined. Who does what? When shall the party take place? Who makes about a banner (thanks Angie!)? These questions were all answered so now we can party!

I thought a lot what to prepare for the party and I decided to bake a blue velvet cake. This is because Mitzia will have a boy. And because my first idea didn’t work out so well. So here is the recipe for the cake.

We need:

For the cake:

125 g butter
300 g sugar
2 eggs
250 g wheat flour
½ tsp salt
250 ml butter milk
blue food coloring
1 tsp baking soda
1 tsp vinegar

For the cream:

250g mascarpone, room temperature
200g cream cheese, room temperature
100g icing sugar
250ml whipping cream

Preparation time: 50 minutes
Baking time: 50 minutes
Waiting time: 1 hour

This is how we proceed:

Preheat oven to 180°C/ 356°F. Grease and dust with flour a cake form

In a bowl mix butter and sugar until light and fluffy. Stir in one egg after another. Add food coloring and stir again. Mix flour and salt in a bowl and add alternately with buttermilk to the butter-sugar mixture. Begin and end with the flour. Mix baking soda with vinegar and add to the dough. Mix well.

Pour batter into the pan and bake for 50 minutes. After 30 minutes I had the cover the cake with aluminum foil.

Remove from the oven and allow to cool completely.

While the cake bakes we prepare the cream. Give cream cheese and mascarpone in a mixing bowl and mix everything well. Add icing sugar and stir again. In a 2nd bowl whip whipped cream until stiff. Add a spoonful at a time of the whipped cream to the mascarpone cream and fold in. Place in a refrigerator for 30 minutes.

Remove the cooled cake of the mold and divided into 3.

To assemble the cake, spread 1/3 of the cream on the bottom flan base. Do the same with the next other 2 flan base. Then frost the whole cake with cream.

Give 30 minutes in the fridge, then the cake can be served.
