Roasted vegetables

During the cold season we need a lot of vitamins to help us to strengthen our immune system. We do not want to be sickly all the time. As you know I drink a lot of smoothies, eat a lot of fruits as well as a lot of vegetables. I really like roasted vegetables - and because of this I am sharing the recipe with you today.

You need:


2-3 carrots
2-3 potatoes
1-2 zucchini(s)
1-2 onions
garlic cloves
1 pepper bell
olives
olive oil
salt
pepper

Preparation time: 10 minutes
Baking time: 40 minutes



This is how we proceed:


Preheat oven to 180°C/ 356°F. Line a baking sheet with baking paper.

Wash the potatoes very well and cut into thick pieces. Wash, peel and cut into uniform pieces the carrots and zucchini. Peel onion and cut in eight. Cut garlic in half. Wash pepper and cut into even pieces. Distribute vegetables and olives on a baking sheet, drizzle with some olive oil and season with salt and pepper.

Bake for 40 minutes.

Optionally, you can garnish the roasted vegetables with some rosemary. Serve immediately.
