Duck breast with potato gratin

As you know, I eat meat rather rarely. I usually do not cook with meat. Because now we have duck season and because my hemoglobin values are still low some days ago I cooked duck breast. As a side dish I prepared potato gratin. Very delicious, I can only recommend this recipe. If you want to try it, here is the recipe.


You need:

300 g potatoes
1 garlic glove
2-3 tbsp olive oil
salt
pepper
25 g Parmesan cheese
250 g duck breast

Preparation time: 20 minutes
Cooking time: 60 minutes
Servings: 2


This i show we proceed:

Preheat oven 180°C.

First we start preparing the potato gratin. Peel, wash and cut potatoes (I used sweet potatoes, normal and purple potatoes) into thin slices. Peel and chop garlic. Mix the potatoes with garlic, oil, salt and pepper. Spread in 2 molds or a larger baking dish. Grate the Parmesan over the potatoes. Cover with aluminum foil, place on the oven grill and bake for 40 minutes.

In the meantime wash the duck breast, dab dry and cut the skin several times. Heat an oven-proof pan without greasing it. Fry the duck breast on the skin side for about 5 minutes, then fry on the meat side for about 1 minute. Season with salt and pepper.

After 40 minutes remove the aluminum foil. Put the pan with the duck breast in the oven and bake for 15-20 minutes. Remove the fillet(s) wrap (individually) in aluminum foil and let stand for about 5 minutes.

Remove from foil, cut into slices, arrange on plates and serve.
