Sweet potato fries


I love sweet potatoes - as gratin, as chips or as French fries. They are a much healthier and tastier alternative to normal potatoes. At least this is my opinion, you don’t have to agree with me :). I didn’t bake until now with sweet potatoes but that is something I want to do in the future. But back to fries ... that's what I have for you today. I tried different recipes, but I was not very happy with the result. The sweet potato fries have always tasted good but they were not crispy. Rather muddy. Then I read on an American blog, that you cover the French fries with stiff egg white, then they remain crispy. I have tried this and the sweet potato fries were crispy. If you want to bake crispy sweet potato fries, here is the recipe.

This is what we need:


2 sweet potatoes
2 tbsp corn starch
1 tsp smoked paprika
1 egg white

This is how we proceed:


Preheat oven to 220°C (428°F).

Peel the sweet potatoes, wash and cut into 1 cm thick sticks. Put in a bowl, cover with water and let rest for1 hour.

After an hour, dribble the sweet potato fries. Pour two tablespoons of starch into a plastic bag and add the fries. Close the bag (keeping the air in the bag) and shake until all sticks are covered with starch. Give pommes in a clean bowl and season with smoked paprika powder.

Beat egg whites stiff and fold under the sweet potatoes.

Grease a baking paper with oil and spread the sweet potatoes on it. Leave enough space between the potatoes so they do not stick together.

Bake in the oven for 15 minutes, then flip potatoes (keep the distance between the sticks) and bake for another 15 minutes. After the 30 minutes  the fries should be crispy.
