Sarah from Knusperstübchen is hosting a blog event where her readers and other bloggers can share their favorite summer recipes. I took this event as an occasion to show you one of my favorite summer salads: watermelon shrimp salad. In the summer I like to eat salads and this one I prepare every year.
You need:

limes

g baby spinach
Mint,
chopped

red chili , deseeded and finely chopped

red, small onion

g watermelon, seeds removed, cut into chunks

Preparation

This is how we
proceed:
- Put the zest and juice of one of the limes in a bowl and toss the prawns in it. Leave to marinate for 15 Minutes.
- Add baby spinach, mint, chopped chili, onion and watermelon in a bowl and mix.
- Heat 1-2 tbsp of oil in a pan. Add the shrimp to the pan. Fry from each side for about 2 minutes. Season with salt and pepper.
- Add shrimps to the salad in the mixing bowl and season with salt, pepper, lime juice and olive oil. Arrange on plates and garnish with pine seeds.
