Mango-leek salad in a glass

Hi! Today I have a delicious breakfast recipe for you: egg in glass on leeks and mango salad.

For 4 servings we need: 
1 leek
1 mango
1 garlic clove
2 tbsp olive oil
1 lemon
2 pinches chili powder
2 tbsp soy sauce
1 tsp honey
1 tbsp oil
4 eggs
1 tsp brown sugar
salt

This is how we proceed:

For the salad wash the leek, dry it and cut it lengthwise in 4 and then 1 cm wide pieces. Peel the mango, remove seed and cut into cubes.

Heat 1 tbsp olive oil in a frying pan and fry the leek for 2 minutes while stirring. Remove the pan from the heat.


Peel the garlic and chop finely.

Add 1 tablespoon olive oil in a bowl. Wash the lemon, dry it and rasp the zest into the bowl. Squeeze out juice. Mix 1 pinch chili powder, half of the garlic, 2 tablespoons soy sauce, honey and 2 tbsp lemon juice and pour into the bowl.


Add leeks and mango and season with salt.


For the eggs heat the oil over medium heat. Set metal ring(s) into the hot oil. Break open the egg in the metal ring and salt the egg whites. Cook the eggs about 3 minutes.

In the meantime add 3 tablespoons soy sauce, 1 pinch chili powder, 1 tsp brown sugar, 1 tbsp oil and the remaining garlic in a saucepan, bring to boil and remove from the heat.


Distribute the salad in 4 glasses, put the eggs over it, sprinkle with the marinade and serve.
