Preparation:
Sift flour, baking powder and salt in a bowl.
Add milk, egg and butter and mix to a smooth dough
Stir in the chopped onion and let to rest for 5 minutes.
Grease a frying pan and heat over medium heat. Add 2 tablespoon of dough into the pan and fry until bubbles form on the surface.
For the topping peel shallots and chop finely.
Melt butter in a pan over medium heat.
Sauté the shallots 2 minutes soft.

Wash, peel and quarter the mushrooms.
Add the mushrooms and the thyme to the onions and fry until golden brown, stirring frequently. Season with salt and pepper.
Spread the mushrooms on the pancakes. Sprinkle crumbled goat cheese over them, garnish with thyme and serve immediately.
