Zucchini rolls with cream cheese filling



Hi! Today I have for you a vegetarian recipe. I hope you like it.

Ingredients:


3 medium zucchini
2 garlic cloves
2-3 tablespoons olive oil
salt
pepper
1 bunch chives or other fresh herbs
1 red onion
200 g fresh goat cheese

Preparation:

Wash the zucchini, peel and cut lengthwise into ½ inch thin slices.


Heat olive oil in a pan and fry the zucchini lightly browned on both sides.


Season with salt and pepper, and press the peeled garlic press over the zucchini.

Remove the zucchini from the pan and drain on paper towels and let cool.


Wash, dry and cut the chives into rolls. Peel onion and cut into fine dice. Mix half of the chives and onions with the goat cheese.

Shape balls of the goat cheese and roll tem trough remaining chives and onion mixture.

Wrap each slice of zucchini around a cheese ball and pin with toothpicks. If the cheese is too soft, then fill the zucchini slice with the cheese and wrap them.

Arrange and serve.
