Cinnamon cookies with goji and cranberries


Hello you! A few weeks ago Juliana from nu3 wrote me an e-mail and asked me if I wanted to test the goji berries. I had heard about the goji berries, but had not yet tried them. So I said yes. First I used the berries for cinnamon cookies with goji and cranberries.

Before I show you the recipe, I want to tell you something about the goji berries. goji berries are also known under the name of wolfberries, bocksdorn or mede berry. Its natural habitat is found from south-eastern Europe to China. A typical Wolfberry region in China's Ningxia.

But what are the goji berries and why do people speak so often lately about them? The goji berries are small red wonder fruits and it is said that they contain the highest concentration of vitamins and therefore support the vitality and energy of the people positively. Goji contain vitamin C, vitamin A, vitamin B1, vitamin B2, iron, copper, nickel, chromium, magnesium, sodium, calcium, and various amino acids, as well as many different nutrients. The goji berry also contains a greater amount of antioxidants than other fruits. All this makes the goji Berry as one of the most nutritious fruits in the world.

They are used in China for cooking and in natural medicine. In summer and autumn, the fruit is harvested and dried in the sun. The fruits are cooked, or if there are sweet, eaten raw, some varieties are highly sour. Leaves of young plants are also used as a leaf vegetable.

And now the recipe!


We need:


225 g butter, softened
140 g sugar
1 egg yolk, lightly beaten
2 tbsp vanilla sugar
280 g flour
1 tsp cinnamon
1 pinch salt
50 g dried cranberries
50 g goji berries

How do we proceed:

Preheat the oven to 190 ° C. Cover baking tin parchment paper.
Add butter and sugar in a bowl and mix until creamy.

Add egg yolk and vanilla sugar and stir again.





Sieve flour, cinnamon and salt over it and mix well.




Add cranberries and goji berries and stir with a spoon until all ingredients are well combined.




Take from the dough tablespoon sized portions and shape into balls. Place on the baking tin (the distance between the cookies should be adequate) and press flat.




Bake the cookies for 15 minutes. Allow to cool on the baking sheet.
