Drunken spaghetti


Hi! Have you ever eaten drunken spaghetti? I ate them just recently. Perhaps you wonder how I came to such an idea. I must admit I have tried once again one of Fabio Viviani's recipes. I've already told you here about him and I also presented to you one of his recipes. What I can say about this recipe is that it tasted very, very good. So I like to share the recipe with you.


We need (for 4 servings):


400-500 g spaghetti
750 ml red wine
750 ml water
ricotta cheese
150 g diced pancetta
½ cup walnuts, chopped
2 Tbsp. butter
grated pecorino cheese to top

How do we proceed?

Cook pasta until al dente in mixture of boiling water and wine.



In a separate pan, sauté pancetta in butter.




Add the spaghetti with some of the reserved cooking liquid (about a tablespoon) to the sauté pan with the Pancetta.



Add ricotta and walnuts and mix.



Place on a plate and top with walnuts and Pecorino.
