Hello you! Since the pumpkin season is not over, I'll show you today a tasty recipe where the pumpkin plays the main role. It is a warm pumpkin-onion salad. The recipe I found on leker.de.
We
need (for 2 servings):

Hokkaido
pumpkin (about 0.5 kg)

red onions

tbsp soy sauce
2
tbsp honey

tbsp oil
pepper

g rocket salad
bacon
4
tbsp vinegar

black
olives
How do we proceed:
Preheat the oven (electric oven: 200 ° C / fan 175 ° C / gas degree 3).
Peel the pumpkin, remove the seeds and quarter.
Cut pumpkin into slices and place in a bowl.
Peel one onion and grate finely.
Add 5 tbsp soy sauce, 2 tbsp of honey and 2 tbsp oil and stir. Season with pepper.
Pour marinade over the pumpkin slices and let it rest for 10 minutes.
Put the pumpkin slices on a with baking paper covered tin and bake for 30 minutes. After 15 minutes, turn on the other side.
In the meantime fry the halved bacon slices in 2 tbsp oil until crispy. Drain on paper towels.
Peel and cut into thin columns 2 onions.
Add the onions in the bacon fat, deglaze with 6 tbsp hot water and 4 tbsp of vinegar. Bring to the boil. Season with salt and pepper.
Arrange pumpkin slices on a plate. Add the bacon and onion. Fold in the washed rocket salad and the olives. Serve!
