Hey. How are you? Did you spend the holiday well? I don’t know how the weather is where you are, but in Vienna it is not so nice. Now the sun is shining, but it is not so warm...only 16 degrees. Yesterday and today it was raining so it is not possible to spend the day outside. So I decided to bake a rhubarb cake. And now I share the recipe with you.
We

What do we need to do?
Preheat
oven to 180°C degree.
Mix
flour and baking powder. Stir butter until fluffy.
Gradually add sugar, eggs, salt and flour-baking powder mixture and stir. In the end, gradually stir in milk until you get smooth dough.
Line a baking sheet with parchment paper. Spread the batter.
For the topping: cut off the ends of the rhubarb. Wash, pat dry and peel the rhubarb. Cut in about 2 cm pieces. Mix the rhubarb with sugar and vanilla sugar and set aside for 5-10 minutes.
Spread the rhubarb pieces evenly over the dough and bake for about 45 minutes. Take out of the oven, let cool.
