After
all the healthy food I have shown you in the past few weeks, it is now time
that we treat ourselves with something sweet. This time I have for you a
typical Austrian dessert - sugared pancakes with raisins. Do you remember? Here
I have told you that I will show you more typical Austrian recipes.
You need:
250
ml milk
130
g plain flour
1
tbsp vanilla sugar
6
egg yolks
6
egg whites
2
tbsp sugar
1
pinch of salt
2
butter
icing
sugar
raisins
This is how you
proceed:
Preheat
oven to 180°C degrees.
Add
milk, flour, vanilla sugar, sugar and egg yolks in a bowl and stir to a smooth
dough.
In a separate bowl beat the egg whites with a pinch of salt. When the egg whites begin to be stiff add 2 tbsp of sugar. Carefully fold in.
Melt 2 tbsp butter in a large, fireproof pan. Pour the dough and bake on both sides (it takes about 10 minutes per side). My pan was not large enough, so I had to divide the batter into 2. And as you can see, it can get a bit messy.
Then place the pan in the oven and bake until golden brown. Take it out and tear the dough into pieces using 2 forks. Add raisins (I did not have any), sprinkle with some sugar and give in the oven and caramelize.
Sprinkle with icing sugar and serve.
