Do you remember the recipe for quinoa salad with cranberries and oranges or the one for the quinoa chocolate cake? I have told you that quinoa is a good alternative for people who can’t tolerate gluten. Luckily I do not suffer from gluten intolerance, but it is not bad to reduce the gluten consumption from time to time. So instead of a dessert that contains gluten I like to eat a quinoa pudding. It is easy to prepare and tastes just as good.
Rinse quinoa with hot water. Add milk, cinnamon, cloves and nutmeg in a pot and bring to boil then add the quinoa and sugar. Cover the pot with a lid and cook over medium heat for about 15-20 minutes until the milk is absorbed. With the help of a fork, remove the cinnamon and the cloves.
Transfer into bowls, sprinkle with some nutmeg or cinnamon and serve while still warm.
For 4 servings you
need:

cup quinoa
2
cups milk
1
pinch of salt
1
cinnamon stick
2
cloves
½
cups of brown sugar
nutmeg
This is how we proceed:
