Sunday, 11am. In 45 minutes I have to be at the gym. And I woke up too late. I need also to eat something for breakfast. And then I realize that the rest of the bread I have is hard as a rock. What should I do? That it strikes me: why not use the remaining quinoa and the almond milk I have? I quickly prepare everything. The whole must boil for 20 minutes. In the meantime, shower, brush the teeth and dress. Quickly take a few photos, quickly eat up and sprint to the gym to arrive on time. Good that this is within 5 minutes by metro. As you can see, it was not planned to cook this recipe. But it emerge from the need and it tastes so good that I had to share it with you. The recipe reminds strongly of the quinoa pudding.
75 g quinoa
250-300 ml almond milk
1 tbsp sugar
berries
Preparation time: 5 minutes
Cooking time: 20 minutes
Servings: 1
This is how we proceed:
Wash well quinoa and put in a pot. Add 250 ml of almond milk and simmer for 20 minutes (or according to the package instructions). Stir from time to time. Add some more almond milk if necessary. Add 1 tablespoon of sugar (I used orange blossom sugar – I found it in my spices) and stir everything well.
Put the quinoa in a bowl and spread the washed berries. Enjoy!
