Today
the meat lovers and friends of the Thai kitchen will be very happy. Because
today I serve you beef salad with bamboo shoots. The preparation of this meal
is quite easy and fast. The only difficulty thing in this recipe is the
somewhat exotic ingredients. But they are not hard to get.
I
must warn you though! This dish is pretty hot. You don’t like spicy food? No
problem: simply don’t use chilies.
You
need:

g beef
200
ml coconut milk
250
g bamboo sprouts
1
½ tsp red curry paste
grated
zest from one lemon
juice
of ½ lemon
2
chilies
This is how it’s done:
Cut beef into strips.
Put the meat with the coconut milk in a small saucepan and cook over low heat for 10-15 minutes, until the meat is tender and has absorbed a large part of the coconut milk. Remove the pot from the stove and let the meat cool (not until is cold, it should not be hot).
Wash, clean and slice the chili pepper.
Put the meat and the remaining ingredients in a bowl and mix everything well.
Arrange on plates and serve immediately.
