Hi. Today I have for all vegetarians out there, but not only for them, a very delicious recipe: stir-fry with couscous. The vegans can also be happy: if you don’t use cheese or replace it with tofu, this recipe is perfect also for you. This dish tastes very well, and I will now often cook it, especially since it is done very fast – you do not need more than 15 minutes.
We
need (for 2 servings):

g couscous

g feta cheese
2
red bell pepper
1
big zucchini
1
small onion
olive
oil
½
tbs provençal herbs
salt
pepper
How
it’s done:
Boil
300 ml of water. In a bowl mix couscous with 1 pinch of salt and 200 ml of
water. Let it soak.
Clean and wash vegetables. Cut the peppers into thin strips and the zucchini into thin slices. Peel and chop the onion.
Heat 1-2 tbsp oil in a pan. Fry onion for 2 minutes at medium heat. Add zucchini and peppers and sauté everything. Season with salt, pepper and herbs. Add 100 ml of water and cook for 5 minutes over medium heat
Loosen up couscous with a fork and add to the vegetables. Mix well, then season again with salt and pepper.
Arrange on plate, crumble feta cheese and serve.
