there. Today I have for you a recipe for a rustic peach pie. Not too long ago I
found this recipe on a Romanian blog and I have bookmarked it. Last week I
bought ½ kilo of peaches and did not exactly know what I should to do with them.
And then I remembered this recipe. Monday after work I went home and I started
to bake. And this is the result.
You
need:
For
the dough:
200
g flour
50
g ground almonds
60
ml water

g butter

tbsp brown sugar
1
tsp salt
For the topping:
peaches
honey
1
tbsp brown sugar
1-2
tbsp semolina
This is how we proceed:
First I must tell you that this tart is not very sweet. If you like it sweeter, then you have 2 options: either use more sugar for the dough or spread the whole dough with honey and not just the edges.
Combine in a large bowl flour, almonds, sugar and salt and mix.
Cut cold butter into pieces and add. Mix until you get crumbly dough.
Add water and mix everything well until you get smooth dough. Form dough into a ball, wrap in foil and give for at least 30 minutes in the refrigerator.
In the meantime, wash peaches and cut into wedges. I have used 5-6 peaches, but it depends on their size.
Preheat oven to 170°C degrees.
Take the dough out of the fridge, divide into two and roll out two rectangles. Spread some semolina on the dough and spread the peaches on it, so that a 3-4 cm large edge remains. Fold edges, brush with honey and sprinkle with sugar.
Do you know what's great about this recipe? You can take also other fruits. The tart tastes great with strawberries, nectarines, apricots, apples, plums, etc. So let your imagination run wild.
