Eggs in avocado boat

It happened again. I have seen a photo of the eggs in avocado boat on Facebook and I had to cook them. I did not even need a recipe...the photo has spoken for itself. Luckily I had all the ingredients in the fridge so within 20 minutes I could eat the eggs in avocado boat. If you want to cook also this tasty dish, then read on.

You need:


1 avocado
2 small eggs
small onion
1 slice of ham
coarse salt
Parmesan cheese


This is how we proceed:



  1. Preheat oven to 200°C degrees.
  2. Cut the avocado into half and remove the seed. Put the avocado on a tin (this can be covered with baking paper but it is not necessary).
  3. Crack each egg into a cup and place it into the hole of the avocado. If the eggs are too large, they will overflow. Simply wipe up the mess with paper towels.
  4. Cut 2 slices of onion and the bacon into cubes and spread over the avocado. Season with coarse salt. Rub some Parmesan cheese.
  5. Bake for 10-15 minutes. I did not wait until the oven was at 200°C degrees, and have given the avocados in the oven (it had already 50 degrees). After 10 minutes I turned off the oven and let the avocados for another 5 minutes inside. For me, the egg was then perfectly...not liquid but not too hard.
