My dears, I'm back from my vacation. It was wonderful...sun, sand and sea. And good food. If I could I would have remained there for ever. But at some point you have to go back. Currently I have to do without the sand and sea. Unfortunately, even without the sun, but it should be again sunny in a few days. But thankfully I do not have to give up on good food. In my vacation I've eaten quite a bit, so we start now with something light. On today's menu we have Lomi Lomi – a Hawaiian salmon salad. Normally for this salad you need to use fresh salmon. This is then rubbed with sea salt, wrapped in clingfilm and kept in the fridge overnight. But I have used smoked salmon.
You need:
200
g smoked salmon
250
g ripe tomatoes
50
g feta cheese
1-2
spring onions

tbsp balsamic vinegar
3
tbsp lemon juice
3
tbsp oil
½
tsp mustard
1
tbsp sugar
salt
pepper
This is how you
proceed:
- Wash tomatoes and chop finely. Wash spring onions and cut into thin rings.
- For the dressing mix the vinegar, lemon juice, mustard, sugar and a pinch each of salt and pepper. Add the oil and blend it.
- Cut salmon into thin pieces.
- Add first a layer of tomatoes and then a layer of green onions in 2 glasses. Add then the salmon and pour over the dressing.
- Place it for 1 hour in the fridge.
- Sprinkle with feta cheese.
