There are dishes that are not photogenic. One example is today’s eggplant mousse. This is the third time I want to share this recipe with you and I am still not satisfied with the photos. But since I do not know how to do the mousse look better I will have to use the pictures that I have.

Not too long ago, I received an email from Tchibo, with the question if I wanna participate to their Blog Parade - Mediterranean cuisine. I then spontaneously said yes...because I like their products (mainly the ones for the kitchen). I had to choose between a pizza, pasta or salad set. I then decided to go for the pizza set, because it also includes a pizza stone. I read recently about it and I was but not sure if it is worth buying. I also showed you the basic recipe for pizza dough and pizza sauce...but I did not show you a pizza recipe for some time.

Gazpacho is a typical Spanish soup that is served cold. This tasty cold dish has its origins in Andalusia. I ate the first time Gazpacho this year. Not in Andalusia but in Barcelona. Until now, I always had the impression that I will not like it. But when I had the opportunity to try it I did it. And I must say that this I really liked the taste of this soup.

Today I have a super delicious dessert for you. And the great thing about this dessert is that it is super fast to prepare. You do not need more than 20 minutes. I just love this kind of recipes. Cooking and baking does not automatically mean that you have to spend hours in the kitchen...because let us be honest: no one wants that nor has the time to do so. I love the summer and I love the heat. I really don’t mind when it is hot outside. To refresh myself I eat salads, drink a lot of lemonade and I eat ice. But now and then I want something else. So even if it's hot outside, I cook from time to time. But I do this always in the evening when it is cooler. And it must go fast. Just as at today's recipe: eggplant with feta, tomatoes and onion.
