Not too long ago, I received an email from Tchibo, with the question if I wanna participate to their Blog Parade - Mediterranean cuisine. I then spontaneously said yes...because I like their products (mainly the ones for the kitchen). I had to choose between a pizza, pasta or salad set. I then decided to go for the pizza set, because it also includes a pizza stone. I read recently about it and I was but not sure if it is worth buying. I also showed you the basic recipe for pizza dough and pizza sauce...but I did not show you a pizza recipe for some time.
I then decided to not bake a pizza with tomato sauce, but one with a white sauce. It was a spontaneous idea basically because I wanted to use the ingredients that I had at home. Actually, the whole pizza is my creation. But back to the pizza stone and the blog parade. I must say that I have never baked such a crispy pizza. That's definitely the merit of the pizza stone. It saves a lot of heat, hence it is crispy. The only drawback I see is that you have to heat the stone for 60 minutes beforehand at 250 degrees.

4 tbsp crème fraîche

This is how we proceed:
Heat oven to 250°C degrees and place pizza stone on the grid. Heat for 60 minutes. If you do not have a pizza stone, then preheat oven to 220°C degrees.
Prepare pizza dough as described here. Halve it and shape into balls. On a lightly floured surface roll the dough out into rough circles using a rolling pin.
Cut 100g mozzarella into short strips. Put them on the pizza bases (leave a distance of 2 cm from the edge). Press the edges over the cheese.

For the sauce mix all ingredients together. Spread sauce on the pizza base. Top with onion, peppers, cherry tomatoes, chanterelles and mozzarella.
With pizza stone: Turn temperature to 170°C degrees, place pizza on the pizza stone and bake for 15 minutes. Without pizza stone: place pizza on a baking sheet and bake for 20 minutes.
Remove from the oven, top with smoked beef and Parmesan. Garnish with basil and serve.
