Roasted peaches with ricotta cream and basil honey

Today I have a super delicious dessert for you. And the great thing about this dessert is that it is super fast to prepare. You do not need more than 20 minutes. I just love this kind of recipes. Cooking and baking does not automatically mean that you have to spend hours in the kitchen...because let us be honest: no one wants that nor has the time to do so. That is why I am very glad that there are such recipes. And now I leave you with the recipe for roasted peaches with ricotta cream and basil honey.



For 4 persons you need:


For the basil honey:
For the ricotta cream:
For the roasted peaches:
4 tbsp honey
2 tbsp mascarpone
4 peaches
6 basil leaves
120 g ricotta
20 g butter
zest and juice from ½ lemon
zest from ½ lemon
2 tbsp sugar

2 tbsp vanilla sugar
1 tbsp vanilla sugar


juice from ½ lemon


This is how we proceed:


For the basil honey coarsely chop the basil leaves, finely grate the peel of ½ lemon and mix with the honey and lemon juice. Set aside.

For the ricotta cream give all the ingredients in a bowl and mix well with the hand mixer. Give in the fridge.

For the roasted peaches cut these in half and remove the core. In a saucepan melt butter, add sugar and vanilla sugar and let foam up. Deglaze with lemon juice. Lay the peaches with the cut side down in the pan and fry for 3 minutes. If the caramel gets too solid, add some more lemon juice.


Place peaches in bowls or on plates, spread cream on top and sprinkle with basil honey. Now our dessert can be served. As you can see in the photos, I garnished the roasted peaches with ricotta cream and basil honey with currants (I had them at home, and found it looks nice).
