My dears, I hope you had a wonderful Christmas. I thought for some days if I should post a recipe between Christmas and New Year or if I should take a little break. But than I decided to post this buttermilk panna cotta recipe. I think it a perfect dessert for the New Year menu. After I made eggplant with buttermilk sauce I had left over some buttermilk and ½ pomegranate. So I needed to find quickly a recipe so I could use these 2 ingredients. I was looking for a recipe and I bumped over the recipe for buttermilk panna cotta. I’ve often cooked panna cotta (another recipe that is waiting to be finally posted) but never with buttermilk. So I tried the recipe. As it was very tasty I now share the recipe with you.
For 4 servings you need:
5 sheets of gelatine
1 vanilla pod
200 ml whipping cream
4 tbsp sugar
250 ml buttermilk
½ pomegranate
This is how we proceed:
Soak gelatine in cold water for 5 minutes. Cut vanilla pod lengthwise and scrape out the seeds (do not throw away the vanilla pod, you can use it to make vanilla sugar).
Boil cream with vanilla seeds and sugar. Remove from heat. Squeeze out the gelatine and stir well into the hot cream until the gelatin has completely dissolved. Gradually stir in the buttermilk.
Distribute into 4 ramekins and refrigerate for 4 hours.
Remove seeds from the pomegranate and place in a bowl. Dive panna cotta ramekins briefly in hot water, dissolve the edge with a sharp knife and place the panna cotta on dessert plates. Decorate with pomegranate seeds and serve.
