Crunchy rings


The 2nd Christmas cookie recipe that I want to share with you, are this crunchy rings. I have baked them this year for the first time. This 2 weeks ago, in the meantime, they are all gone. Therefore I have to bake a new tin these days. The recipe I have from the "Cooking" magazine.

What do we need:


For the dough:
For the brushing:
For the decoration:
130 g plain wheat flour
1 egg yolk
chocolate
70 g soft butter
1 tbsp milk/ water
sprinkles
1 egg white
50 g almonds

50 g fine sugar


1 tbsp vanilla sugar


 
This is how we proceed:

Sieve flour into a mixing bowl. Add soft butter and knead with the dough hook of the hand mixer. Add the egg white, knead. Add sugar and vanilla sugar and knead to dough.

Wrap in cling film and give 1 hour in the refrigerator.

Preheat oven to 180 degrees. Line a baking sheet with parchment paper.

In a small pan (without oil) almonds fry briefly. I have used the skinless ones.

On a floured surface roll out the dough 1 cm thick. With a round cookie cutter cut out circles and then using a smaller one cut out the center. Place the cookies on the baking tin. Whisk egg yolk with milk/ water, brush the rings and sprinkle with almonds. Bake for 10 minutes.

For decorating the cooled rings melt some chocolate and decorate with the help of a spoon. You can also use sprinkles; your imagination has no limits.
