Radish leaf soup

I must confess that so far I have always trough away the leaves from the radishes. Until recently I had no idea that you could use them for making a soup. That changed when I was with my friend and she told me that she wanted to cook this soup. I was quite skeptical, but she said that the radish leaf soup tastes very good. When I bought radishes, I decided to try the soup. Said and done. And yes...the soup tastes really good...who would have thought. So, next time do not throw away the leaves, but try this soup.


You need: 

2 bunches of radish leaves
1 potato
1 onion
1 bunch soup green (2 carrots, 1 parsley)
water
salt and pepper

This is how we proceed:


Clean, peel and cut into chunks the vegetables. Wash radish leaves very well. Put everything in a pot and give 1 – 1,5 liters of water. Cook until the vegetables are soft. This takes about 30 minutes.

Cooking radish leaf soup

Add vegetables and something from vegetable water in a blender and puree. Add enough water until the soup has the desired consistency. Season with salt and pepper. Garnish with croutons and radish and serve immediately.
