Corn salad with Emmentaler and honey-mustard dressing


Hi! While browsing the internet I came across a German site with many recipes. I have found a few great recipes that I really want to try out.

Since I've gained 1-2 kilos during the Christmas season I planned to quickly get rid of them. Therefore I will eat more salads. Today, I'll show you a delicious winter salad: corn salad with Emmental cheese and honey-mustard dressing. I can only say: yuuummmmmmy!


What do we need:


For the salad: 

100 g corn salad
175 g Emmentaler cheese
1 green apple
1 red onion
1 bunch radishes
30 g walnuts

For the dressing:

1 tbsp honey
2 tps Dijon mustard
2 tbsp apple cider vinegar
1 tbsp sunflower oil
chives
salt
pepper

How do we proceed:

For the dressing, stir vinegar, honey and mustard until smooth. Season with salt and pepper. Add the oil and stir well.




Wash the chives, dry it and cut it into rolls. Add to the dressing and stir.




Toast walnuts in a pan without oil. Let them cool and then chop coarsely.




Cut cheese into thin strips.
Wash and slice the apple into thin slices.

Wash radishes and cut into thin slices.

Put the cheese, apple and radish in a bowl and mix with ½ of the dressing.



Wash lettuce, dry it well and place on plate. Sprinkle with the remaining dressing. Set aside.

Peel onion and cut into fine strips. Spread over the lettuce.



Add the cheese salad on top.

Sprinkle with roasted nuts and serve.
