Hi and welcome to the New Year! How have you celebrated? What's typical for New Year's Eve? Of course Prosecco. And I'm sure many of you have not drunk the whole bottle. But what do we do with the remaining champagne? How about with a Prosecco soup?
We
need:

onion

leek
½
small knob celery

carrot

heaped tsp flour

ml vegetable stock
150
ml whipped cream
salt
pepper
100
ml Prosecco
butter
How do we proceed:
Wash the vegetables and peel. Chop the onion, and cut the leek into thin rings. Cut celery and carrot into small cubes.
Mix flour with 100 ml vegetable stock.
Give it to the remaining broth and pour it to the vegetables. Cover and cook for 20 minutes.
Beat whipping cream until stiff and season with salt and pepper.
Puree the soup.
Fold in half the whipped cream into the soup.
Before serving, cook again and pour 100 ml of Prosecco. Cook for 1 minute, then serve with whipped cream heap.
