Lemon cupcakes with cream cheese frosting


Hi there! How are you? Want some cupcakes? I love cupcakes. And I love lemons…even if it sounds a little strange. And I also like cheese. So when I read the recipe for these cupcakes, I didn't think twice and I baked them.
 
We need:


For the cupcakes:
For the frosting:
2 eggs
100 g butter
90 g sugar
100 g icing sugar
120 g soft butter
110 g crème cheese
190 g flour
1-2 tbsp lemon juice
2 tsp backing powder

110 ml milk

1 pinch salt

3 tbsp lemon juice

grated lemon zest








How do we proceed:


We start with the frosting, because he needs to be kept cool. Mix Butter with icing sugar.




Then cream cheese and lemon juice are added and everything is mixed.





Give the cream in an icing bag and put it in the refrigerator.




Preheat oven at 175°C degrees.

Add the butter in a bowl and whisk until fluffy.





Add sugar and stir.





Add one egg at a time and stir.




Mix flour and baking powder then shift it over the cream. Mix well.




Add lemon juice and zest and stir.





Slowly pour milk over the dough and mix well.




Fill the dough into the Cupcakes forms and bake for 20 minutes.




Allow cupcakes to cool.




Before serving decorate with frosting.
