Coconut rice pudding with mango and lime

Hello! When I was little, we had for breakfast quite often rice pudding. Yesterday I wanted to eat rice pudding, so I got to work. I've pimped up the classic recipe a bit, and the result tasted wonderful. I hope you enjoy it also.

Ingredients for 2 servings


400 ml coconut milk
100 ml milk
30 g sugar
1 packet of vanilla sugar
100 g rice
1 ripe mango
½ lime





How do we proceed

Put coconut milk, milk, sugar and vanilla sugar in a pan and bring to boil.


Add the rice and cook for 10-15 minutes or according to package instructions over low heat, stirring constantly.


Peel mango cut the flesh from the stone and cut into small cubes. Place in a bowl. Drizzle lime juice over the mango cubes.
Fill the rice pudding in cups or bowls. Put the mango on top and serve.
