Pasta with cherry tomatoes

Pasta with cherry tomatoes

Hello food lovers! After many bloggers have praised the Deli Magazine, I bought it too. This happened last November. I've took a look at it and I was delighted with the recipes. So I immediately tested one. The first recipe that I have cooked from deli is a pasta recipe. And today I share it with you.

We need:

320 g pasta
400 g cherry tomatoes
400 g pine nuts
30 g pancetta, cut into fine strips
1 chili pepper
50 g black olives
20 g capers
salt
pepper
sugar
6 tbsp olive oil
4 stalks basil

Ingredients

The ingredients are for 4 servings.

How do we proceed:

Fry pancetta in a pan without oil at medium heat until crispy.

In a pan (without oil) fry pine nuts until golden brown over medium heat. Caution: Keep the pine nuts in sight, as they burn quickly!

Wash the chili and slice it in rings.

Wash and halve the cherry tomatoes.

Put pancetta, pine nuts, chili, tomatoes, olives and capers in a large bowl. Season with salt, pepper and a pinch of sugar. Stir in olive oil.

In a pot bring water to boil for the pasta. Use the bowl with the tomatoes as a lid.

When the water begins to boil, remove the bowl. Salt the water, add the pasta and cook according to package instructions.

Drain the pasta and add them in the bowl. Mix with the tomato mixture and basil.
