Hello dear cooking friends! Yesterday I went shopping and I discovered fresh spinach at the market. Although I did not intended to buy spinach, I ended buying it. When I arrived home, I asked myself what I could cook with it. I browsed my cookbooks and the internet and I came upon a recipe I liked. I found it interesting so I decided to cook it. And today you can admire the results.
For
2 servings we need:
500
g fresh spinach
1
onion
1
garlic clove
2
tbsp sunflower oil
2
eggs
nutmeg
salt
pepper
And this is how we proceed:
Preheat oven to 200°C (fan oven 180°C, gas level 3).
Peel the onion and garlic and chop finely.
Remove spinach stalks, wash thoroughly the leaves and drain.
Heat up oil in a large saucepan, sauté onion and garlic until translucent.
Add the spinach and wilt it while stirring. Season with nutmeg, salt and pepper.
Put the spinach in a bowl and let cool. Form 2 balls, and squeeze well. Place on a tin lined with baking paper. Flatten the balls and then form a well in the center. Slide the eggs into the well of the spinach nests.
Bake for 15-20 minutes.
Arrange on plates and serve.
