Madeleine – a French delicacy

Hello my dear! A few days ago I baked my first Madeleines. Not because they are so complicated, no, it really is a breeze to bake these little delicacies. It took so long because I did not have Madeleine baking pan. Until now.
The Madeleine is a small French sponge cake that has the origins in Commercy and has the shape of a scallop shell.

Writer Marcel Proust dedicates the pastry in his book "In Search of Lost Time" several pages. The taste of a Madeleine dipped in tea reminds the narrator of his childhood, becoming the catalyst of the whole works. (Source: wikipedia)

But enough history, here is the recipe:

We need:

25 g butter
3 eggs
1 egg york
1 package vanilla sugar
160 g sugar
150 g flour
1 tsp backing powder
zest from one lemon
2 tbsp lemon juice


How do we proceed:

Preheat the oven to 190 degrees. Grease the molds.

In a small saucepan, melt 125 g butter let it cool down.

In the bowl beat the eggs, egg york, sugar and vanilla sugar for about 5 minutes until the mixture fluffy. In a bowl whisk together the flour and baking powder and shift the mixture over the whipped eggs. Gently fold in, using wooden spoon.

Add the lemon juice and zest.

Stir in the melted butter.

Put a generous tbsp of in each mold and bake for 8-10 minutes until the edges are golden brown.

Remove the Madeleines from the mold and place on a wire rack and leave to cool.
