Pumpkin-apple soup


Hello my dears. Isn’t it great? The pumpkin season is reopened. Here, here and here you can seea few pumpkin recipes. And today I have for you a soup recipe. The soup is really delicious, so I invite you to try it out.

We need:


½ kg pumpkin
3 apples, sweet
1 l vegetable stock
1 onion
1 tsp nutmeg
pumpkin seed oil
70 ml cream
1-2 tbsp soy sauce
salt
pepper

How do we proceed:

Peel and dice the pumpkin and the apples.

Peel the onion and chop finely.

Heat some oil in a large pot and sauté the onions slightly. Add the pumpkin and apples, then pour the vegetable stock and simmer for 15-20 minutes.


When the pumpkin is soft, puree everything.

Pumpkin-apple soup in the making

Season with nutmeg, salt and pepper, 1-2 tbsp soy sauce and pumpkin seed oil.


Add the cream and stir well.


Arrange on plates and serve
