A Kitchen Aid. Who doesn't want one? I would love to own one, but I must confess I would never spend so much money for it. Why I am talking about the Kitchen Aid? No, I did not get one as a gift. But there is the chance to winning one. How? Easy. On sixx.at there is a baking contest where everyone can participate. I also took this opportunity and go into the battle with my mole cake. The chances are very small that I win, but it does not hurt to try. And if I get one or the other vote from you, maybe my dream of owning a Kitchen Aid will come true.
But let’s go back to the mole cake. I think everyone has eaten this cake once. There is the cake mix from Dr. Oetker for it. I love this cake and I've baked it many times as a student. But now I'm not a fan of cake mixes anymore. Still, there must be a way to also bake the cake without using a cake mix. And there is one. Here is the recipe for the homemade mole cake.

the batter:

For the crème:

g quark

ml whipping cream

g sugar

g chocolate flake

gelatin leaves
Preheat oven to 180°C degrees.
For the batter separate 4 eggs in egg yolk and egg white.
In a large mixing bowl whisk the egg yolks with 4 tbsp water until fluffy.
In a separate bowl beat egg whites until stiff. Add to the egg yolks-sugar-cream and fold in gently.
Mix flour, cocoa and baking powder in a bowl. Sieve on the dough. Gently mix all ingredients with a whisk.
Cover a spring form pan with baking paper and grease the edges some little butter. Pour dough into the mold and smooth the surface. Bake for 30 minutes.
In the meantime, we prepare the cream. Soak gelatine in water.
Peel a banana and mash it with a fork.
Place in a bowl and the mashed banana and the quark and mix together.
Add sugar and mix.
Fold in chocolate flakes.
Squeeze gelatine, add to the crème, stir and give for 20 minutes in the refrigerator.
Hollow the base of the mole cake with a spoon. Make sure that an edge remains. Put the crumbs in a bowl.
Peel the remaining 3 banana, cut in half lengthwise and spread on the hollowed ground.
Spread cream like a dome. Spread the crumbs and press them lightly.
That's it! The cake can be served. Really easy, right? There are many steps, but it is worth. The cake tastes heavenly!
