Have you ever heard of quinoa? I must confess that I did not know what it was until last week. But what is quinoa? Quinoa is a so-called pseudo cereal because it forms starchy grains. The seeds of quinoa can be processed, so that they can be eaten for example as a side dish. It contains no gluten and is suitable for celiac patients as an alternative to conventional grains. But why am I telling you all this? Because I 'm going to show you a very tasty quinoa recipe. To be more precisely on today’s menu we have quinoa salad with cranberries and oranges.
A few days ago I saw a photo of this recipe on Facebook. The salad looked so good that I searched on the internet for the recipe. I found it and yesterday I cooked it. And today I share it with you. Sometimes it can go so fast.
You
need (for 4 servings):

g quinoa
375
ml water
100
g cranberries
3
oranges
2
tbsp olive oil
1
tsp honey
grated
zest from one orange
1
handful of mixed nuts
pomegranate
seeds from ½ pomegranate
mint
leaves
Rinse quinoa with hot water. Bring water to boil and add the quinoa. Cook over medium heat for about 15-20 minutes until the water is gone. Let it cool to room temperature, the transfer to a bowl. Add the orange zest.
When quinoa is cooled completely, gently stir in the oranges and cranberry mixture.
