How do we proceed:
Wash and cut tomatoes into cubes. Halve, deseed and dice paprika. Peel onion and dice. Chop chill and garlic
Heat the oil frying pan. Add chili and caraway seed and let the aroma spread. Stir in the onions, garlic and pepper and cook until they begin to soften. Add the tomatoes and cook for about 5 minutes. Season with salt and pepper.
Using a wooden spoon, create 2 pockets in the tomato mixture and crack the eggs into them. Cover the pan and cook the eggs over low heat until done. This depends how you like your eggs. I cooked them for about 10 minutes, but I think 5 minutes or even less had been enough.
Crumble Feta cheese and sprinkle over the dish. Menemen is served with garlic-flavored yogurt. For this you need to mix 5 tbsp yogurt with the 2 crushed garlic cloves and season with salt and pepper.
