Regarding
the classic Tiramisu there are quite different opinions: some people like it
and some don’t. And some people don’t like it only because the cream is
prepared with raw eggs. And many believe that this is not healthy. I have no
problem with raw eggs...I very often have prepared Tiramisu at home but also
ordered it in restaurants. But why am I telling you all this now? It's
simple...because I have prepared a Tiramisu recipe that doesn’t contain eggs.
Many might say that this is not a tiramisu. Yes, they may be right...but I will
anyway call this recipe rhubarb tiramisu 😁
You need:
400
g rhubarb
50g
+ 125 g sugar
ladyfingers
rhubarb lemonade (alternatively, orange juice)
500
g mascarpone
500
g quark
1
tsp vanilla sugar
And this is how you
proceed:
Wash
rhubarb and cut into small pieces. Caramelize 50 g sugar in a pan. Add half of
the rhubarb and simmer 5 minutes. Add the rest of the rhubarb and cook for
about 1 minute. Give the rhubarb into a bowl and let to cool down.
Place ladyfingers close together side by side in a baking dish or into glasses and sprinkle with the rhubarb lemonade or orange juice.
For the creme stir together mascarpone, quark, 125 g sugar and vanilla sugar. Spread the cream on the ladyfingers. Spread the cooled rhubarb on the cream. Cover the tiramisu and cool for the least 2 hours.
The rhubarb Tiramisu in glass is perfect as a Mother’s Day gift or for a picnic with friends.
