Panzanella


What to do with a ton of tomatoes, a half full glass of capers and a forgotten bread in the fridge? Well, who can guess? Right! An Italian bread salad. Together with another 2-3 ingredients you get a very good tasting summer salad.

You need:


800 g mixed tomatoes
1 garlic clove
1-2 onions
2 tbsp capers
3-4 slices old bread
1 handful fresh basil
olive oil
balsamic vinegar
salt
pepper

    The ingredients are for 4 servings.


    This is how you proceed:


    1. Cut bread into bite-sized cubes.
    2. Halve tomatoes or cut into larger pieces.
    3. Cut onion(s) into rings.
    4. Halve the garlic and rub the inside of a large mixing bowl with it. Then add the bread, tomatoes, onion, capers and basil and mix together. Add generous splashes of olive oil and vinegar and season generously.
    5. Leave the salad to soak up the flavors for 15 minutes.

    Arrange on plates and serve.
