Salad with tomatoes, goat cheese and currants

I am now sitting for over 20 minutes before the PC trying to write an introduction for today's post. I started 10 different sentences but deleted all as I was not happy with the result. It's one of those days where I have zero inspiration. I'm sure I can sit here for hours and I will not get further. Therefore, I make it short and painless: Today a new salad recipe is waiting for you.

You need:

1 roll goat cheese
300 g mixed cherry tomatoes
4 tbsp red currants
4 tbsp olive oil
2 tbsp balsamic vinegar
salt
pepper
fresh thyme


This is how we proceed:

Cut goat cheese into 1 cm thick slices Wash and halve the tomatoes. Alternating layer them with the cheese on a plate. Add the currants.

For the dressing mix the olive oil and vinegar then season with salt and pepper. Pour the dressing over the salad and sprinkle with thyme leaves. The salad can now be served.
