Pumpkin Spice Syrup & Pumpkin Spice Latte

Pumpkin Spice Syrup

The last time I showed you that you can use pumpkin not only for soups or salads, but also for cookies. And today I show you how you can do homemade spice syrup and pumpkin spice latte. It's really easy and it is a lot better than the bought stuff. You don’t believe me? Then you have to try it out, so here is the recipe.

For the pumpkin spice syrup you need:

300 ml water
300 g sugar (brown and granulated one)
100 g pumpkin puree
1 tsp gingerbread spices
½ tsp cinnamon
¼ tsp nutmeg
¼ tsp ginger

This is how we proceed:

For the pumpkin puree cut 150 g pumpkin flesh into cubes, spread on a baking tin lined with baking paper and bake at 180°C degrees for 50 minutes. Cool slightly and puree.

In a saucepan, add water and sugar. Simmer on low heat until the sugar dissolves.

Whisk in the spices and the pumpkin puree. Simmer (but do not allow the mixture to come to a boil!) for 10-12 minutes, stirring occasionally.

Strain through a very fine mesh strainer (or trough cheese cloth). Fill syrup in clean bottles and allow cooling at room temperatures. Keep it in the fridge.
