Elderflower ice cream

There is a simple reason why I do not post ice cream recipes. No, it is not because I do not like ice cream, because that's not true. It is because I have no freezer. How can that be? It's simple...while I found my new apartment, I did not realize that there is none. But you know what...that is not so bad. The only downside is that I cannot prepare ice cream. If I ever want to make ice cream, then I have to go to my friends. For them it is not a big problem. But for me it is because in addition to the ingredients and ice molds I have to carry around the camera and props for the photos. But what don’t I do to make you happy? So I did all that and the result is this yummy elderflower ice.

You need:


250 ml whipping cream
200 g Greek yoghurt (10% fat)
2 tbsp icing sugar
1 tbsp lemon juice


This is how we proceed:

Whip the cream until stiff.

Give yogurt, sugar, elderflower syrup and lemon juice in a bowl and stir.



Add cream and fold in.

Use a spoon to fill mixture into molds.



If you don’t have ice molds, then give the mixture in a container, cover it and put in the freezer for about 4 hours. Every 30 minutes you must stir the mass. This helps to reduce the formation of big ice crystals. The lucky owner of an ice machine can use this to prepare the ice.
